Karkalla embodies our deep connection to Country and the rich heritage of Bundjalung land. Founded by Mindy, a proud Bundjalung woman, Karkalla represents a return to her roots and a dedication to sharing the culture, stories, and wisdom of her ancestors. We would like to acknowledge and pay our respects to the traditional custodians of the land, sky, and sea—the Indigenous people of Australia—and to our Elders past, present, and emerging.

Karkalla, Bundjalung Country


Mindy returned to Country with a powerful vision: to create a venue on Bundjalung Country that fosters connections between Indigenous and non-Indigenous people through the rich tapestry of Aboriginal culture, expressed through food, art, and storytelling. Alongside her partner Rachelle, this dream materialized with the opening of Karkalla restaurant, where they proudly showcase locally sourced, seasonal produce and native Indigenous ingredients. Karkalla quickly became a beacon for those eager to engage with the land and its ancient culture.

The success of Karkalla was highlighted by achieving consecutive Australian Hats from the AGFG, marking Mindy as the first female Indigenous chef to receive this prestigious recognition. This accolade was not just a personal milestone; it underscored the significance of Indigenous knowledge and its rightful place in modern Australian cuisine. Most recently, Mindy was honored with the World 50 Best Restaurants Award as Champion of Change 2025, further solidifying her impact on the culinary landscape.

Building on this momentum, we are now excited to expand Karkalla beyond the restaurant with Karkalla On Country—an immersive culinary and cultural experience situated on Bundjalung Country. This new chapter is dedicated to deepening connections to the land, celebrating Indigenous culture, and honoring the sacred ingredients that sustain us. Our mission is to bridge the gap between the thriving ‘bush food’ industry and its traditional knowledge holders, ensuring that these remarkable ingredients are introduced to the marketplace with the respect and reverence they deserve. Join us on this journey of discovery and connection, as we celebrate the rich heritage that shapes our culinary story.

Outside of her culinary pursuits, Mindy is a passionate educator about the importance of native foods in shaping Australia’s cultural identity. Mindy serves on the board of Black Duck Foods, is a NSW Landcare Ambassador, and is a cultural facilitator for The Returning and Country as Teacher .

Mindy believes that food is at the heart of culture and that experiencing food is essential for understanding any culture. Food carries history, connection, and identity. Mindy's mission is to highlight and safeguard native Australian foods, emphasizing their profound relationship with Country, Community, and Culture.
