Grilled Halloumi with Bush Honey & Native Thyme

Serves 2-4, Shared Dish

Native ingredients: macadamia oil, native thyme, pepper leaf

Ingredients

  • 200 g halloumi, cut into 2 cm-thick slices

  • 1 lemon, zested and juiced

  • 2 tablespoons macadamia oil or extra-virgin olive oil

  • 1 tsp KARKALLA native thyme

  • 4 tbsp bush honey

  • ½ tsp KARKALLA native pepper leaf

Method

  1. In a small bowl, combine the lemon juice, lemon zest, 1 tbsp macadamia oil, bush honey, KARKALLA native thyme leaves and KARKALLA ground pepper leaf. Stir until well combined.

  2. Heat a small fry pan with remaining macadamia oil. When hot add the halloumi in a single layer. Sear until golden brown. Turn over Halloumi and pour the bush honey mixture into the pan.

  3. Continue to cook until the honey mixture is bubbling and glossy. Spoon over the halloumi throughout. Keep a close eye on it, as honey can burn quickly. Once cooked through, serve immediately alongside warm crusty bread.
